Ik kom uit Perugia, de hoofdstad van de regio Umbri\u00eb in Midden-Itali\u00eb \u2013 een stad die bekend staat om zijn chocolade en universiteit, in een regio die bekendstaat om zijn truffels. Umbri\u00eb is een van de weinige regio's waar alle soorten truffels van nature groeien.<\/p><p>Ik herinner me nog de eerste keer dat ik truffels proefde \u2013 ik was zeven jaar oud. Een van mijn ooms was chef-kok bij een van de meest gerenommeerde restaurants in Perugia. Tijdens de feestdagen kookte hij vaak voor de hele familie, en soms liet hij ons verse truffels en andere delicatessen proeven.<\/p><p>De eerste keer dat ik met een hond op truffeljacht ging, was in 1990. Het is echt bijzonder: hoe een hond zo'n neus voor truffels kan hebben. Ik ben hierheen verhuisd voor de liefde. Sinds mijn aankomst in Nederland heb ik een ongelooflijke transformatie in de culinaire wereld meegemaakt. De interesse in eten en drinken is enorm gegroeid en in de loop der jaren veel verfijnder geworden. Aanvankelijk herinner ik me dat slechts een handvol restaurants interesse had in het gebruik van truffels op hun menu.<\/p><p>Tegenwoordig krijg ik vragen over fijne zwarte en witte truffels uit zowel de zomer als de herfst, en restaurants vragen me regelmatig welke wijn het beste bij welke truffel past. De liefhebbers van truffels komen uit alle leeftijdsgroepen en lagen van de bevolking \u2013 en ook veel jongeren. Ik had al ervaring in de verkoop en kende verschillende klanten op de markt, vooral in Amsterdam. Langzaam maar zeker, met een website, visitekaartjes en donaties aan liefdadigheidsdiners (Italia al Dente, De Smaak van Itali\u00eb, Taste of Amsterdam, Sunday Market) en andere kleinschalige evenementen, begon mijn naam te circuleren onder toprestaurants in Nederland en daarbuiten. Ik werk uitsluitend met producten uit mijn thuisland, Midden-Itali\u00eb. Gelukkig blijft de truffel een product waarover alleen Moeder Natuur beslist \u2013 wanneer, hoeveel en hoe hij groeit. En eerlijk gezegd ben ik blij dat dat zo is. Het is een eerlijk en mooi ingredi\u00ebnt waar je misschien wel of niet van geniet, maar ik weet zeker dat als het goed wordt bereid door een bekwame chef-kok, en met aandacht en waardering wordt geproefd, je er het allerbeste van zult ervaren. Op dat moment ben je in Amsterdam \u00e9n in Itali\u00eb tegelijk. My name is Massimo Damiano. I come from Perugia, the capital of the Umbria region in central Italy\u2014a city known for its chocolate and university, in a region famous for its truffles. Umbria is one of the few regions where all types of truffles grow naturally. I remember the first time I tasted truffles\u2014I was seven years old. One of my uncles was a chef at one of the most renowned restaurants in Perugia. He often cooked for the entire family during the holidays, and sometimes he let us taste fresh truffles and other delicacies. The first time I went truffle hunting with a dog was in 1990. It\u2019s something truly special\u2014how a dog can have such a nose for truffles. It\u2019s always a magical experience. 1992 &#8211; A move to The Netherlands I\u2019ve been living in the Netherlands, in Amsterdam, since 1992, now together with my daughter Nora. I moved here for love. Since arriving in the Netherlands, I\u2019ve witnessed an incredible transformation in the culinary scene. Interest in food and drink has grown immensely and become much more refined over the years. Initially, I remember only a handful of restaurants were interested in using truffles on their menus. Today, I receive questions about fine black and white truffles from both the summer and autumn seasons, and restaurants regularly ask me which wine pairs best with which truffle. The people who appreciate truffles come from all age groups and walks of life\u2014many young people, too. Food brings people together. 2006 &#8211; The start of Il Tartufo Di Massimo In 2006, I decided to register with the Chamber of Commerce and start my own venture. I already had sales experience and knew several clients on the market, especially in Amsterdam. Slowly, with a website, business cards, and donations to charity dinners (Italia al Dente, De Smaak van Itali\u00eb, Taste of Amsterdam, Sunday Market), and other small events, my name began to circulate among top restaurants in the Netherlands and beyond.
